    Interesting project! The hardware side appears to be working as the controller that is already reporting pressure-sensitive button values should do so here. The problem is probably in the way these values are being translated to MIDI. When the MIDI monitor is constantly pointing to 127, it could be seeing only the on/off analog pressure instead of the range. Consider using a software program that will enable custom mapping and scaling of controller input to MIDI velocity, or see if your existing MIDI utility can accept analog pressure input instead of digital button presses. First I would ensure that you can get a nice smooth range of values MIDI out from the controller itself before installing the piezo sensors. It seems like a nice little DIY idea, much like a LetterBoxed puzzle, where each tiny puzzle piece must be placed in the right spot with the rest of the pieces to form the full image. Luck to all, and I would love to see how the piezo test goes!
