An easy workaround is to render the crash to an audio file, then draw a rapid fade-out to that audio file – make the timing of that fade match a realistic choke. Then EXPORT this as a new audio file. Then IMPORT this new audio as a sample into EZ drummer, assigning it to whichever kit and crash cymbal you like. You may wish to create a duplicate of the current kit and make ALL of those cymbals choked, so that you can blend seamlessly with the regular crashes. 🙂
