In case this helps anyone, just had a similar problem. When adding an instrument in Cubase 12, the drop-down folder for Toontracks loads EZD 2. To load EZD 3, I need to use the drums folder.

Go to your Drums tab and hit the down arrow at the rim of the cymbals you want to remove. You’ll see an option for ‘none’ at the top. This will “grey” them out. This will isolate the cymbal you want.
