I finally got around to exporting a WAV with EZKeys. It appears to be 8-bit. Really? Did I do something wrong? Toontrack drums export to 24. Id expect the same quality here. Does anyone use 8-bit for anything anymore?

Are you using the latest version of EZkeys (1.1.2)? Are you using the standalone version and using the Song Track->Export Song as Wave File… option?
I just rendered a test file using the standalone EZkeys (1.1.2 64-bit) and it renders here a 16-bit 44.1kHz stereo wav file.

Not stand alone-within DAW. I might’ve been wrong about 8-bit, it appears to be half of the file size if my 24-bit tracks. So …12-bit? Even 16 seems a little under par?
Exporting using the EZkeys ‘Song Track->Export Song as Wave File…’ option renders a 16-bit 44.1kHz file. If you want to render a 24-bit file you need to use export function in your DAW by dragging your MIDI from EZkeys into your DAW and rendering from there.

I guess, I’m surprised by that. I would’ve guessed 24-bit files, like Superior. If I render it through my DAW, would I actually be getting better sound quality? Or, is it a wash, based on the programming of EZkeys and the way it plays?
You would be getting the same quality as they sound when you play MIDI through EZkeys. No more or less.
EZkeys uses Toontrack proprietary loss-less compression algorithm TPC for their samples.
