Not exactly drums but same diff technically

I recently aquired a accoustic studio piano. I want to chop out the keyboard and use it to create a simple midi controller with full velocity release detection abilities. Does anyone know how to wire those circuits while maintianing the “weighted” feel of the pianos keys?
