“it deletes my midi from the first riff and starts it all over again.”

The idea is you already committed that midi that to your song track. The work is all done on Riff 1. So it’s not an issues if you start all over again with your second riff. WHen that riff is done, you commit it to your songtrack and then proceed to riff 3.

Not sure if I overlooked your OP or maybe you have a followup.

i attached 2 pics. the first shows my song track full of midi, when i want to do a new riff, the only way i can see to get the options is to hit file new, then it completely deletes all of my midi. the first time i did this, i di not save my project, and i lost everything. i hope it makes sense what i am saying.

Did you try this a second time just to see if the behavior is consistent? Do a quick test if not. Maybe you hit something really bad on accident.

If by New file you mean in the Upper left File Menu, that is not where you select a New File. That would mean an entirely new project. You want to hit the New Session button in the upper right of your first picture.
