How do I route SD3 Mixer channels to my Studio One 5 DAW for separate stereo tracking?
Go to the mixer page in SD3 and click on the mixer drop down tab that’s just below the header in the upper left. Then click on ‘apply multichannel outputs’. Then organize the SD3 mixer channels to how you want to group them to feed your daw tracks. The rest is up to how your daw works and for that I’d suggest reading the manual for your daw as well as the SD3 manual. Lots of great info in those documents that will serve you well now and in the future.

Exactly what Jack said to do and then in Studio One, with the Mixer View active, near the bottom left you will see a list of your virtual instruments.
Expand Superior Drummer
Then select/activate the tracks that correspond to the tracks in SD3 (each selection will result in a mixer channel/fader in Studio One)
