I’m running EZD3 within my DAW (Logic) on a brand new MacBook Pro. All of the samples – especially higher frequencies like cymbals – sound like poor quality mp3s. This is noticeable both when just sampling any of the EZD3 drum kits, or when playing back an EZD3 song I’ve created and saved within the DAW.
I don’t notice the issue with any EZD2 cymbals that I have added to the EZD3 kit, only the EZD3 cymbals (or if it’s there, it is not as noticeable). Also didn’t have any such issue with this within EZD2 with the exact same set up a month ago.
Is there some setting within EZD3 or my DAW (ie: low bandwidth / space-saving mode) or something that I’m missing? Anyone else experience this?

I think you have to provide some audio examples. If there was something affecting all users, we’d see a lot of noise about that here on the Forum, so it must be something locally on your system or in your project.
I am also running EZD3 on a brand new MBP and I can’t say I’m experiencing poor quality here.

One issue I did have is it seem the EZ3 cymbals are a lower volume than EZ3 toms, snare and Bass Drum. In the Bleed section of the mixer I turn up the OH and Ambience, it did bring the cymbals to life. Although I’m still new to the EZdrummer family. I’ve only had EZ3 for a few days. I did purchase the EZ2 Core library as well. It does seem the EZ2 cymbals have a little more volume than the EZ3s. EZdrummer 3 is awesome so far.
