I tend to take demos people make and then figure out the chords. Then I figure the key and change the key on EZkeys which changes all my chords again.
As a workaround I figure out the chords in Cmajor for the whole song. I can’t figure the key until I’ve mapped the chords. Then export the midi then change the key to the correct key and reimport the audio but when it prompts I do not change the key. Seems counter-intuitive but it works not to change key on prompt.
Is there a better workflow?

That is probably the best way to do it.
There is another way – change the song key, double click a block, then transpose the block to the previously used song key. This will show the correct chords. However, the Chord Selector will be rotated, since it’s adjusted to the transpose, e.g. if you transposed the block to A, the A chord will be the topmost chord in the Chord Selector even though the song key may be something else. I would say that you should do like you do, to avoid having the Chord Selector rotated.
If possible, add the song key to start with. By doing that, everything will be correct from the beginning!

Yes, ask for the sheet music from the original composer.
Why would you even attempt to figure anything out when the original composer would just give you sheet music for his original composition.
