There are not many valuable reasons left to use the Piano Roll in your DAW besides personal preference. Which is why, for the most part, I leave the midi in EZD3. EZD3’s new Grid Editor has a few humanization features that you’re DAW can not perform as well as customizing chokes/mutes.

If you’re one to Freeze DAW tracks as your workflow or want a simpler way or replicate/Edit entire DAW Session parts at once, those are solid reasons to bring your midi out of EZ and into your DAW’s instrument track.

“maybe you start in EZDrummer at the beginning and then “export” the midi track (or audio track?) to Cubase?”
No. You would simply drag it out of EZD3’s Song Track directly into your DAW’s Instrument track. Instant results. You will hear a double triggering though, so don’t forget to mute your midi in EZ or delete it. Keep in mind, dragging it back to EZ is not as easy in some DAW’s.
