I am totally new to EZDrummer and I’m using EZDrummer3. I have loaded the kit that I like and its following the midi in my DAW perfectly. However, I want to change the hihat only. I don’t have a hihat I want to import but I want to sample through the hihats in EZ3, replacing my current hihat with a new one. When I go through the hihats to listen and locate one I like, it changes the whole kit! I just want to change the hihat. Is this possible? How? And how do I save it as a customized kit once I’ve change the hihat?

This should work if you select the hi-hat in the Drums tab (by clicking on it), then go to the instrument menu in the top left corner. From this menu you can replace the hi-hat with another one from any of you libraries or with one of you own samples.
And how do I save it as a customized kit once I’ve change the hihat?
You can save the drum kit, mixer settings etc as a User Preset. Open the preset menu in the top right corner of the EZdrummer 3 window, then go to User Presets>Save As…
