Is there a way to convert a stereo drum loop to midi, in Superior 3?

yes you can. You have to bounce the stereo file to mono first

I saw this video but it was geared toward isolated separate recordings. I was asking about stereo recordings of a full drum kit

If the recording is clean, you can use it in the same manner on each kit piece. You just need to tweak it a bit.
