I would like to know if it is possible to add two shades of cowbells in the same set because I have only been able to add one in the palm section, but I need two different shades of cowbells.

You can put your own cowbell sample onto any instrument. I can’t remember how. Try right-clicking on an instrument and see if a menu comes up with it or you can left-click and look in the box that will open towards top left.

If you need both cowbells to have real velocity, you’d buy an EZX that has a cowbell kit instrument, Big Stage EZX for example. Now you have two cowbell slots.
Or you use two instances of EZDrummer at the same time in a DAW.

The added benefit to Shootie’s suggestion is that you can use a dedicated percussion library and have multiple variations of cowbells along with other percussion instruments.
