I’m writing a song using Ez Drummer in Cubase. I have a fill that I want to pop. How do I turn up the volume of just that section of drums?

if you are indeed referencing to the Volume, it’s probably easiest to automate the EZdrummer 2 Track fader in Cubase.
If you want the virtual drummer to play louder (as in hit harder), you can increase the Velocity of those fill hits, either by:

I would think volume envelope in the DAW, not EZDrummer. Though it might be more authentic to “play” it harder and increase velocity in EZ.
