I want to start by saying the issue is NOT how do I assign each instrument to their respective channel in my DAW for focused mixing on each part of the drum. My question is – WHY are they combining ALL the toms and ALL the cymbals (OH) on ONE channel each within EZDrummer??? So when I mix the only option I have is to mix ALL the Toms and ALL the cymbals on a single track?? There must be some way of seperating every mic so I can focus on the hihats lets say. What am I missing?!?!?!
Great question! It seems like the focus of the product is a holistic, “live” recording as opposed to a more strict recording studio setup.
I’ll be curious to read replies.

My guess is because it’s EZDrummer and it would devalue their flagship product ,Superior drummer. If this is an essential workflow for you, consider crossgrading to SD3.
If you need it that bad in EZD2, the only workaround would be to mix exported audio stems. Mute all but one tom, for example, export your tom bus. Rinse and repeat until you have isolated all toms. Repeat workaround for each grouped set of instruments, like separating your ride from your OH.
I feel hihats are typically isolated on most, if not all, Library Presets.
