I can’t comment on Logic because I use Cubase but it should be similar.

I create a MIDI track and assign the MIDI Out to EZdrummer. I’ll pick the expansion pack I want and make the part. If I’m creating the basic drum part, I’ll select a drum kit. The Jazz EZX kit in your example.

If I want the then use the Latin Percussion EZX for a conga groove, I’ll load a second instance of EZdrummer and load the LP EZX. Then I’ll create a new MIDI track and assign the MIDI Out of that track to this second EZD instance (the LP EZX). I’ll then proceed to make the conga part.

Since the different kit pieces (tambourine, conga, shaker, etc) in the LP EZX are assigned to their own MIDI note(s) you can create multiple MIDI tracks (Tambourine track, conga track, shaker track, etc.) and assign them all to the same EZdrummer instance (LP EZX) and they will play their correct parts, provided you are using the proper mapping and/or the included MIDI grooves.
