Please implement a setting to prevent EZBass from using the low B string – in effect giving you a 4-string bass.

I would choose option #2 all day long. This allows you to get what you want, although not as easy as a one switch function of disabling the low-b string. However, it would allow high note harmonics on the thicker strings, and higher notes to be played further up the neck on the thicker strings, and long string slides as well.
Take note Toontrack, So don’t add in a note to disable the low-B string, and call it done.
